Usually, searching for AT cases on Ebay yields yields very few results
Now - there are quite a few for sale....I wonder if the market for those is drying up

Absolutely.
Local availability of retro hardware can vary considerably depending on where one lives. In some cases, Ebay may be the only opportunity to get certain hardware.
I speak from personal experience here.
Could be the usual nonsense where the blessed search engine thinks it knows better than you what you're after ('AT? You must have meant ATX!'). I have to put quotes around everything now or else it throws me 28,000 spurious matches.

Could just be people have notice they command some money and parted out some old machines for a quick buck.

Since I came to this part of Nor Cal in 2019 I've kept an eye out for AT cases - I managed to find one complete system in a dumpster by chance, and I got another for $20.00 from Craigslist. I've only seen a couple of bare cases for sale, and they were too far away for me to justify the drive.
After watching many YouTube videos about older computer hardware, YouTube began recommending videos about trains - are they trying to tell me something?
Might be another reason - perhaps the supply of AT power supplies is drying up. How long since those have been made now?
EDIT - I stand corrected on that! Seems like they ARE still being made!
Maybe try searching for "baby AT"?
