I belatedly discovered [very belatedly] that the original dos Nascar Racing 1 and Indycar Racing can be played in a higher-res mode simply by running the exe with a -h switch. Very nice little enhancements I'd totally missed first time around.

Most of the oldies make it pretty clear during Setup.exe or Install.exe what possible modes there are - but there must be other games out there with 'easter eggs' similar to NR/ICR - not so obvious switches to add greater res or detail - anyone add to the list?

Carmageddon's got a -hires switch.

Registered versions of Descent have switches to play in 640x480 before Descent II made it an official feature.

A few games were like this. For example, Marble Madness supports PCjr/Tandy, but the box doesn't mention this.

Pirates! also doesn't say anything about Tandy support on the box, but when you start it up, the option is on the opening screen.
