As the title says,should I install Windows Server 2008 R2 (Windows 7 x64 for servers basically)or stay with the current Windows 7 x86 I have?

Specs of my PC if needed:

AMD Sempron 3400+ 1.80GHz
1GB DDR2
Geforce GT210
450W Delux PSU
1TB SATA HDD
LG DVD drive
Winfast Tv200XP TV Tuner (PCI)
22' Horizon LCD

NOTE:I know this thread is not retro.

I'd stick with Windows 7 x86. Unless you have over 16gb of ram, I wouldn't install a server OS. Unless you really need to host something; like a server, virtual terminals, proxy, etc.

Only reason to install it would be to become familiar with the OS.

There was some benefit to running NT4\2000 vs 9x or 2000 vs XP or 2003 vs XP or 2008 vs Vista back in the day but not today.
