FX chips are silly expensive and have the timing bug (all A64X2s do). Multi-core also isn't that big of a deal for older games, so I'd go with a fast single core and eliminate cost and potential headaches. Even 6800U in SLI will be very cpu bounded on 939 - no point in 7900GTX or 7950GX2 SLI. Not saying don't do it, just that it will be very CPU bound. GF7 and whatnot better coincide with AM2 and Core 2-era hardware.
On the motherboard, I'd go Asus A8N over the DFI. It doesn't require jumpers or card flipping and will be potentially easier to find. Good performance too.
I'd also skip SP3 and all of the 2009+ updates and features. Throw SP2 on there and go. No point in attempting to "modernize" such a machine for the web imho.
Oh, and throw an Audigy or X-Fi in there. 😀
