When did monitors and cards start taking advantage of EDID? Can it be disabled or overwritten so that full control of the video output is granted?

You can remove the EDID pin from the VGA connector, or you can buy a male to male VGA adapter and remove the EDID link inside it if you don't want to play with your monitor's connector.

That's the pin missing on early VGA (to prevent you from plugging it into other similar plugs) added later by VESA. This is very likely to confuse modern monitors and cards, with modern being early as the late 90s.

I don't see how EDID is stopping you. You can always send weird video modes, it's just up to the monitor to be able to handle them.
