I'm using a raspberry pi MT32 emulator with MIDI input hat. I have two machines I'd like to connect to it; is it possible to connect BOTH to a MIDI splitter without switching cables constantly?

As in, a y-cable that plugs into the MIDI IN jack and each tail connects to MIDI OUT on a different computer...

yes/no. you must get a midi merger box or a midi patch bay. midi uart communications is 1:1, you need extra resources to split the signal, a Y-Splitter cable wont work.
